Baked Salmon with Avocado, Peach salad and Lemon Mustard Dressing

Ingredients and Directions

Baked salmon:

  • Salmon fillets
  • Slice lemon
  • Slice onion
  • Salt and pepper
  • Olive oil

Bake salmon at 220°C for 10mins on underside (skin facing down), flip over and continue to cook for a further a few minutes, until skin is crispy and golden.

Salad Ingredients:

  • 1 avocado
  • 1 peach
  • spinach

Dressing:

  • 2 tsp mustard
  • Half fresh squeeze lemon juice
  • 2 tbsp extra virgin olive oil
  • A little bit of salt and pepper

Mix all the ingredients, give it a good stir and pour over your salad and enjoy with your baked salmon.
